R&D activities of UAB Litamilk to develop a prototype of a new cheese product

Litamilk UAB is a continuously growing company with R&D activities, aiming to continuously develop and supply innovative and marketable products. Litamilk intends to develop a blend of various types of milk flour, vegetable fat flours and modified starch with technological additives for the production of cheese analogues. The project will aim to create a mixture to which only water needs to be added, mixed, heat-treated to produce a cheese analogue (cheese product) for use in the production of pizza, hamburgers, sandwiches and other dishes.
The aim of the project is to carry out research to develop a dry blend product suitable for the production of a quality cheese product.

Project objectives:
    • Developing the optimum suitable product formulation and adapting the heat treatment technology to the blend being developed (as heat treatment has a major impact on the properties of the final product).
    • Determination of the characteristics of the mock-up/prototype of the cheese analogue and the discovery/description/identification of possible applications of the product developed.

The project is being implemented under measure 01.2.1-LVPA-K-856 “Experiment”. Financed as part of the EU’s response to the COVID-19 pandemic by the European Regional Development Fund.

Project promoter: UAB “Litamilk”.

In partnership with Kaunas University of Applied Sciences, „Litamilk” UAB developed new food components and raw materials for targeted use in livestock feed

In partnership with Kaunas University of Applied Sciences, „Litamilk” UAB implemented the project titled „Development of new food components and raw materials for targeted use in livestock feed on the basis of whey concentrate powder” (project No. J05-LVPA-K-03-0044). Under implementation measure No. J05-LVPA-K, „Intellect. Joint science-business projects”, of Priority 1, Promoting Research, Technological Development and Innovation, of the action programme under the European Structural and Investment Funds 2014-2020, the EU’s European Regional Development Fund contributed EUR 150,021.32 to this project.
„Litamilk” UAB is the only company in Lithuania and Latvia specialising in powdered milk substitutes enriched with various vitamins and microelements for a balanced feed for young calves. The goal of the project is to conduct scientific research on the functional characteristics of whey concentrate powder and to develop, on the basis of its results, new whey-concentrate-powder-based products.
Most scientific research on whey powder is done using system modelling, yet there has been no comprehensive analysis to date of its application in food products and production of raw materials for targeted use in livestock feed. There has been no scientific research demonstrating the benefit of added whey concentrate powder on technological characteristics of products, how these characteristics relate to thermal processing, the pH of the medium, other ingredients of the product, the amount of oxygen, and other factors.
The project partner, Kaunas University of Applied Sciences, is an education and research institution whose laboratory will be used for conducting microbiological research on whey concentrate powder and determining its scope of application for producing new products.
This project has the following outcomes: comprehensive scientific research conducted on the functional characteristics of whey concentrate powder; experimental production technology devised for new products; prototypes of 5 new products produced and tested for use the food industry; prototypes of 2 new raw materials produced and tested for targeted use in livestock feed.
The development and implementation in production of the proposed new products will enable „Litamilk” UAB to offer Lithuanian domestic and export companies in the food industry cheaper (due to the use of local supplies) and healthier (non-GMO, with no added sugar, free of allergens of plant origin, and enhanced with beneficial nutrients due to the use of whey concentrate powder) products.
